If you love chocolate and cherries, this vegan chia pudding is for you! This is my first time making and having chia pudding. I don’t know why I waited so long!
As you can probably tell by now, I like recipes with minimal ingredients and that are easy to make. Combine everything minus the cherries and chia seeds.
Straining the cherries prevents lumps in the pudding. If you like the small fruit chunks, by all means skip this step! Add it to the mixture along with the chia seeds. Stir and refrigerate. Top with Cashew Cream and enjoy! The link for the Cashew Cream recipe is HERE.
Chocolate Cherry Chia Pudding
- 1 Cup Coconut Milk
- 1/2 Cup Chia Seeds
- 3/4 Cup Cherries blended
- 1 tsp Vanilla
- 3 Tblsp Cocoa Powder
- 1/8 Cup Maple Syrup
- 1/2 Cup Cherries blended
- 1/2 Cup Cashew Cream
Combine the coconut milk, vanilla, maple syrup and cocoa powder in a bowl.
Blend 3/4 of a cup of cherries up and add to the mixture.
Add the chia seeds and stir.
Refrigerate for 2 hours, stirring occasionally.
Blend 1/2 cup of cherries and strain. Add half to the cashew cream and add it on top of the pudding. Click the link above in the blog to get the recipe for the Cashew Cream.
