Gazpacho

 

There is something about a Gazpacho that says summer, don’t you think? The fragrance of the basil with the tomato is mouthwatering.

Gather all the ingredients as this is very fast to make. I use tomatoes that are overripe as they have a lot of juice and flavor.

 After cooking the garlic & onions, add them to the blender along with everything else.

Ingredients

  • 5 Tomatoes
  • 1 Red Bell Pepper
  • 5 Cloves Garlic
  • 1 Onion
  • 1 Tblsp Extra Virgin Olive Oil
  • 1/2 Cup Fresh Basil packed
  • 1 Jalapeno

Instructions

  1. Cook onion and garlic in the oil until translucent.
  2. Puree tomatoes, basil and jalapeno. Add cooked onions and garlic.
  3. Chill 30 minutes and serve.
