There is something about a Gazpacho that says summer, don’t you think? The fragrance of the basil with the tomato is mouthwatering.
Gather all the ingredients as this is very fast to make. I use tomatoes that are overripe as they have a lot of juice and flavor.
After cooking the garlic & onions, add them to the blender along with everything else.
- 5 Tomatoes
- 1 Red Bell Pepper
- 5 Cloves Garlic
- 1 Onion
- 1 Tblsp Extra Virgin Olive Oil
- 1/2 Cup Fresh Basil packed
- 1 Jalapeno
Cook onion and garlic in the oil until translucent.
Puree tomatoes, basil and jalapeno. Add cooked onions and garlic.
Chill 30 minutes and serve.
