The combination of mushrooms, zucchini and cashews give these tacos a great texture and are filling. I made mine in lettuce leaves, but they would be lovely in a tortilla as well.
These tacos use such simple ingredients that I think they would be great for either a lunch or dinner.
Sauté the mushrooms, onions and zucchini.
Assemble the tacos and top with cashews, salsa and mango sauce. I used my Mango Sauce from my Cashew Buddha Bowl recipe which is a few posts previous. The link to the recipe is HERE.

Mushroom Zucchini Tacos
Ingredients
- 1 Tomato
- 1/2 Habanero
- 2 Tblsp Purple Onion
- 1 Lime zested
- 3 Tblsp Cilantro
- 1 1/2 Cups Mushrooms
- 1/4 Cup Onion
- 1/2 Habanero
- 1 Small Zucchini spiralized
- 3 Large Romaine Leaves
- 1/2 Cup Cashews
- 1 tsp Mango Sauce
Instructions

Combine the tomato, habanero, purple onion, cilantro and lime juice.

Slice the mushrooms, habanero and onions.

Saute until soft.
