Fajitas are a quick and easy dinner to make and are bursting with flavor! Adding a homemade salsa to it brightens up the flavor profile dramatically! Yes, yes, I know they aren’t wrapped like a fajita, but I like mine like this!
Let’s start with the salsa ingredients.
Wear gloves once you get to the pepper! You do NOT want habanero oils on your skin! Mix everything together and let marinate for a couple hours.
Now for the fajitas. Mmmmmm, so many pretty colors! Start Slicing the veggies and lay them out on a baking sheet. It’s a veggie rainbow! Brush with oil mixture and bake.
Voila! The veggies are done and are delicious.

- 1/4 Cup Extra Virgin Olive Oil

Slice the mushrooms, peppers and onions.
Lay them out on a baking sheet.
Mix together the second amounts of oil, garlic, chili powder, lime juice and cilantro. Brush it over the vegetables.
Bake for approximately 20 minutes, or until desired tenderness.
