Carrot Cake Oatmeal

 

I’ve seen different versions of carrot cake oatmeal but have never tried it. I don’t know why I waited so long to have it because it’s amazing!! It tastes like you’re eating dessert for breakfast, which is always great!

Add everything all at once and cook. You can’t get much simpler than that which makes this is my ideal way of cooking in the morning. Choose between adding apple or pineapple to it. The pineapple makes it a bit sweeter, but if you don’t have any around, apples work just as well. Letting it sit after it’s done cooking is key to having a less runny oatmeal. By the way, it smells like cake baking while it’s cooking!

Ingredients

  • 3 Cups Water
  • 1 Cup Steel Cut Oats
  • 1 Carrot grated
  • 1 1/4 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1 tsp Vanilla
  • 2 Tblsp Maple Syrup
  • 1/4 Cup Coconut Milk
  • Pinch of Salt
  • 1/4 Cup Raisins
  • 1/2 Cup chopped Apple or Pineapple
  • Pecans

Instructions

  1. Bring water to a boil in a saucepan. Slowly add the oats and cook for 1 minute.
  2. Remove from heat and add everything except the pecans in.
  3. Reduce the heat and simmer for approximately 10 minutes or until the apple/pineapple is tender.
  4. Remove from heat and let it sit covered for 5 minutes. Serve with pecans and desired toppings or as is.
