Chickpea & Avocado Lettuce Wraps

 

Today was one of those days where I was wanting something filling for lunch. Seeing I had chickpeas and an avocado, I decided to combine it and it was delicious!

 

Smash together the chickpeas and avocado. If you like it creamier, put it into the food processor. The link for the ranch dressing is HERE. Homemade dressing is so much better than store bought in my opinion. Feel free to buy vegan dressing from the store if you don’t want to make it. Add remaining ingredients and serve!

Chickpea & Avocado Lettuce Wraps

Ingredients

  • 1 - 15 ounce Can Chickpeas
  • 1 Avocado
  • 2 Tblsp Vegan Ranch Dressing
  • 1 Stalk Celery
  • 1/4 Cucumber
  • 2 Tblsp Green Onions
  • 1 tsp Lemon Juice
  • 1/2 tsp Cayenne
  • Pinch Salt & Pepper
  • 6 Lettuce Leaves
  • 1/2 Cup Cherry Tomatoes

Instructions

  1. Drain and rinse the chickpeas.
  2. Smash the chickpeas, cayenne, Vegan Ranch Dressing and avocado together. If you want it smoother, pulse it in the food processor. The link for the ranch dressing is posted above in the blog.If you don't want to make the dressing, you can buy vegan ranch dressing.
  3. Slice up the celery & green onion and dice the cucumber. Add it to the mixture.
  4. Serve on lettuce leaves and top with tomatoes.
