Who else enjoys having a plate full of greens for lunch? I love the taste and texture of raw zucchini so I decided to make that the base of my salad rather than lettuce. What’s even better is how fast it is to make it; which is ideal for busy days. This salad is topped with a modified version of a Green Goddess Dressing. I made it with Vegan Ranch Dressing for the base, and the recipe is HERE. If you don’t want to make your own ranch, you can buy it from any grocer.
Start off with spiralizing your zucchini and add tomatoes. After that top it with pea shoots, lime flavored dried chickpeas, avocado and pumpkin seeds. The dried chickpeas add a wonderful crunch that takes the place of croutons. If you don’t like dried chickpeas, you can use canned ones but just make sure that it is rinsed well.

Zucchini Salad
Ingredients
Salad
- 1 Medium Zucchini
- 4 Cherry Tomatoes
- 1 Cup Pea Shoots
- 1 Avocado
- 1/4 Cup Dried Chickpeas Lime Flavored
- 2 Tblsp Pumpkin Seeds
Dressing
- 1/4 Cup Vegan Ranch Dressing
- 1 Tblsp Fresh Dill
- 1/2 Lime juiced

Wash and spiralize the zucchini.

Top with cherry tomatoes, pea shoots, dried chickpeas, pumpkin seeds and half a sliced avocado. You could use canned chickpeas if you prefer.
Dressing

To make the Green Goddess Dressing, combine Vegan Ranch dressing, the other 1/2 of the avocado, dill and lime juice. Blend until everything is combined. The link for the dressing is listed above in the blog. If you don't want to make the ranch dressing, you can buy it from the grocers.
