Buffalo Chickpea Lettuce Wraps

 

Sometimes you just need to have hot sauce and tonight was one of those nights. There’s just something about it that satisfies cravings. I decided to make lettuce wraps and just add things to the chickpeas and it tasted wonderful. I love it when just throwing ingredients together make such a great tasting meal! This is one of the recipes that people are shocked when they find out it’s vegan!

It’s very easy to make. Simply add the ingredients into the food processor. Blend until it’s the desired consistency and then add chopped celery and vegan cheese. I used my Vegan Ranch Dressing in it. If you’re interested in the recipe, you can get it HERE. Add extra hot sauce to make it your desired heat level. I love spicy foods, so I added ghost pepper sauce as well as hot sauce! Spread on lettuce leaves and roll it up. That’s it!

Ingredients

  • 2 Cups Chickpeas
  • 1 Avocado
  • 1+ Tblsp Hot Sauce
  • 2 Tblsp Vegan Ranch Dressing
  • 1 tsp Chili Powder
  • 1 Tblsp Extra Virgin Olive Oil
  • 2 Tblsp  Vegan Cheddar Cheese
  • 1 Stalk Celery chopped
  • 6 Large Romaine Lettuce Leaves

Instructions

  1. Rinse and drain the chickpeas. Add everything except the lettuce, cheese and celery to the food processor. Pulse until you reach the desired consistency. Add the cheese and chopped celery. The recipe for the Vegan Ranch Dressing is linked in the blog above.

  2. Cut the stalk from each lettuce leaf. Spread the mixture on each lettuce leaf half and add more hot sauce if desired. Roll and serve.
