Now that I’ve tried overnight oats, I am on a roll with it! You can it eat it either hot or cold, but with this one, I personally prefer it cold. Lemon pairs well with so many different fruits, but when it’s paired with blueberries, it tastes so summery. You can’t ask for an easier recipe for breakfast. You simply mix everything together and let it sit overnight. I do add a very small amount of salt to my oatmeal because I think it improves the flavor, but you can skip this step if you like.
Lemon Blueberry Overnight Oats
- 1 Cup Rolled Oats
- Barely a pinch of Salt
- 3/4 Cup Blueberries
- 1/2 - 3/4 Cup Coconut Milk
- 1/2 tsp Vanilla
- 1 - 2 Tblsp Maple Syrup
- A few drops of Pure Lemon Oil
In one bowl combine the rolled oats and salt. Stir well.
In another bowl combine the milk, vailla, maple syrup and lemon oil. Make sure you use the lemon oil sparingly as it is quite strong. If you don't have lemon oil, you can use 1 - 2 tablespoons of grated lemon peel.
Pour the wet ingredients into the dry. Scoop a small amount into a jar and layer with the blueberries. Repeat until the jar is full.
Refrigerate at least 6 hours but will be good up to a week. Top with homemade granola.
