It’s quite cool and dreary today so I wanted something that had lots of color. I love that quinoa is a complete protein and goes with so many things. This salad has so much flavor and is filling enough for a meal. The crunch of the raw veggies with the quinoa satisfy your palate.
You simply just cut up all your raw veggies and toss them with the lettuce and quinoa.
To make the sauce, you simply combine the ingredients and blend.

Quinoa Salad with Avocado Cilantro Dressing
Ingredients
- 1/2 Cup Quinoa
- 1 Cup Vegetable Stock
- 1 of each Red & Orange Bell Peppers
- 1/2 Cup Corn
- 4 Cups Romaine Lettuce
Dressing
- 1 Cup Cilantro
- 1/4 - 1/3 Cup Extra Virgin Olive Oil
- 1 Avocado
- 1 Garlic
- 1 - 2 Limes
- 1/4 tsp Chili Powder
- Pinch of Salt
Instructions

Combine the vegetable stock and the quinoa in a saucepan. Bring to a boil then reduce heat and simmer until the stock is gone; around 7 - 10 minutes. Remove from heat and cool.

Chop up the veggies and put in a bowl. Add the quinoa and lettuce.

Blend all the dressing ingredients until smooth. Adjust the lime juice according to your taste Pour over salad and serve.
