This is one of my many favorite salads. It has lots of flavor and is a great side to any meal. You can eat it as a meal too, but I personally prefer it as an addition to the meal. It tastes really good with grilled veggies or mushroom skewers.
You simply cut up everything and toss the dressing over it. If you let it marinate, the flavors get even better. I recommend to marinte the salad at least 30 minutes. I used my Vegan Ranch Dressing in the sauce; the link for the recipe is HERE. If you don’t want to make your own, store bought will work fine.
Vegan Broccoli Salad
- 2 Cups Broccoli
- 1/2 Red Bell Pepper
- 1/4 Cup Purple Onion
- 1/4 Cup Vegan Cheddar Cheese
- 3 Tblsp Chopped Pecans
- 3 Tblsp Vegan Ranch Dressing
- 1 Tblsp Apple Cider Vinegar
- 1 Tblsp Maple Syrup
Chop all the salad ingredients and toss in a salad bowl.
Whisk together the Vegan Ranch Dressing and maple syrup. Slowly add the vinegar until it tastes right.
Pour over the salad and marinate for 30 minutes to an hour.
