I have found my new favorite lunch! It’s easy to make and full of flavor. The veggies still have a slight crunch and pair well with this creamy peanut sauce.
After spiralizing the zucchini and carrots, simply combine the sauce ingredients and cook over medium heat. Once it’s cooked, remove from heat and add the veggies. Put the lid on the saucepan for 5 minutes so the veggies steam slightly in the sauce and then serve!
Warm Zucchini Salad with Peanut Sauce
- 1 Medium Zucchini
- 1 Carrot
- 1 Garlic Clove
- 1 Tblsp Grated Ginger
- 1/2 Cup Natural Peanut Butter
- 1/4 Cup Coconut Milk
- 1 Tblsp Sweet Chili Sauce
- 1/2 Tblsp Coconut Oil
- 1/4 tsp Cilantro
Spiralize the carrot on the smallest blade and the zucchini on the next size up.
In a sauce pan, heat up the coconut oil and then cook the ginger and garlic for 2 minutes. Add the peanut butter and the sweet chili sauce. Bring to a simmer and remove from heat.
Add the carrots, cilantro and zucchini to the sauce. Toss in the sauce and cover for 5 minutes.
