Today was the first I tried fresh figs and I was not dissapointed. They are very hard to find here and I am now absolutely in love with them! I decided to pair it with raspberries in a coconut chia pudding, and I have to say that it pairs perfectly.
Start by blending the raspberries and the center of the figs. At this point you can either strain the seeds out, or leave them in. Add chia seeds and water to thicken. Make the coconut pudding and layer in the glass. I guarantee that you will love this combination. I hope you enjoy this as much as I do.
Fig Raspberry Coconut Chia Pudding
- 2 Figs
- 1 Cup Raspberries
- 1 Tblsp Chia Seeds
- 2 Tblsp Water
- 1 1/4 Cups Coconut Milk
- 1/2 Cup Chia Seeds
- 2 Tblsp Coconut Flakes
- 1 Tblsp Maple Syrup
- 1 tsp Pure Coconut Extract
Combine all the ingredients for the coconut pudding and mix thoroughly. Refrigerate 1 hour, mixing frequently.
Blend raspberries and the middle of the figs together. Strain if desired. Add water and chia seeds and let it set for 10 minutes.
Layer the two puddings in a glass and refrigerate for another hour or overnight.
