Yes, I love pumpkin spice and I am not ashamed to admit it. If I can incorporate it into breakfast food, all the better! These oats satisfy any craving and I topped it with banana nice cream. I love topping breakfast foods with it as it has no added sugar and it looks like you’re eating dessert.
Start by adding pumpkin and spices to the coconut milk, or any plant-based milk of your choosing. Here is the pumpkin pie spice recipe: 3 Tablespoons of Cinnamon, 2 1/4 teaspoons of Ground Ginger, 1 1/2 tsp of Allspice, 1 1/2 teaspoons of Ground Cloves. Pumpkin Spice Overnight Oats
Ingredients
OATS:
- 1 Cup Rolled Oats
- 3/4 Cup Coconut Milk
- 3 Tblsp Pumpkin Puree
- 1 Tblsp Maple Syrup
- 1 tsp Vanilla
- 1 1/2 tsp Pumpkin Pie Spice
- A small pinch of Salt
BANANA NICE CREAM:
- 1 Frozen Banana
- 1 tsp Vanilla

In a bowl combine the coconut milk, pumpkin, pumpkin pie spice, vanilla and maple syrup. The recipe for the pumpkin pie spice is listed above. Add more maple syrup if needed.

Add the oats and salt. Refrigerate 6 hours or overnight.

Just before serving, make the banana nice cream. Cut the banana into small chunks. In a food processor add the banana and vanilla. Blend until it is creamy. Serve immediately over the oats.
