What’s life without trying new things? On my adventure of trying new foods, I have now tried oyster mushrooms. The texture is very different than any other mushroom that I’ve tried but I really like it. They do somewhat resemble the texture of sea scallops but these mushrooms honestly taste better.
Cut the oyster mushroom up into one inch pieces. The tops are just as tasty as the stems so don’t get rid of them. Marinate them for an hour.
Saute the mushrooms until they are brown on each side. They do release a lot of liquid, so just make sure you keep moving the mushrooms around. Serve with your favorite greens or rice.

Scalloped Mushrooms
Ingredients
- 3 Oyster Mushrooms
- 1 1/2 Cups Water
- 1 1/2 Tblsp Tamari or Soy Sauce
- 1 Tblsp Extra Virgin Olive Oil
- 3 - 5 cloves of Garlic
- 1 tsp Lemon Juice
- 1 tsp Rice Vinegar
- 1 tsp Cajun Spice
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- 1/4 tsp Cayenne Pepper
- Salt & Pepper
- 1 Tblsp Coconut Oil
Instructions

Combine everything in a bowl except the mushrooms and the coconut oil. Mix thoroughly.

Cut the mushrooms up into 1 inch sections and marinate for an hour in the marinade.

In a frying pan, melt the coconut oil and then saute for 3 - 5 minutes per side or until brown. Serve with greens or rice.
