Raw Gingersnap Cookies (Vegan & Sugar Free)

 

After a much needed break from everything, I am back with a delicious and satisfying cookie recipe! These have the bite from the ginger and are sweet from the dates. They have no added sugar, they are dairy free, nut free, gluten free (if you use the right oats) and are vegan! The most important thing though, is that they taste amazing!

You simply process the oats until they are the consistency of almost a flour, and then you add the rest of the ingredients. It’s that simple! I form them and then keep them in the freezer because I like the consistency that gives them, but you could keep them in the refrigerator.

 

Raw Gingersnap Cookies (Vegan & Sugar Free)

Ingredients

  • 2 Cups Rolled Oats
  • 1 1/4 Cups Medjool Dates
  • 2 Tblsp Gingerbread Spice Mix
  • 1 tsp Ground Ginger
  • 1 tsp Vanilla
  • 3+ tsp Water

Instructions

  1. In a food processor, pulse the oats until they are almost a powder consistency and then pour out.
  2. Add the dates and process until it forms a ball. Add the rest of the ingredients and pulse until all combined. Add more water if needed.
  3. Form into cookie shapes and freeze for at least one hour.
