Chocolate & Blood Orange Overnight Oats

 

I love citrus fruits and I love that it is blood orange season! They have such an unique flavor and color and go with almost everything. When you pair this with my love of overnight oats, it makes me speechless! I topped my oats with blood orange frozen coconut yogurt, mmmmm. Yes, the recipe for the topping is included below. The orange makes these oats so sweet that you don’t need to add any sweetner at all.

For this version of the overnight oats I decided to grind the oats some to give it a creamier texture and it made a huge difference! It tastes way more like a dessert than a breakfast!

Combine all the ingredients together for the oats. When the cocoa powder hits the blood orange juice, the smell is so mouthwatering that you will find it hard to wait until the next day to eat this!

An hour before serving the oats, mix together the coconut yogurt and the blood orange juice. Coconut yogurt is so delicious and works amazingly for this! Freeze for around 45 minutes to an hour; or until it is the consistency that you want. Top the oats with it and enjoy immediately.

Chocolate & Blood Orange Overnight Oats

Ingredients

Oats

  • 1/2 Cup Blood Orange Juice
  • 1/4 Cup Plant Based Milk
  • 1 tsp Vanilla
  • 2 Tblsp Cocoa Powder
  • 1 Cup Rolled Oats

Frozen Coconut Yogurt

  • 1 Cup Coconut Yogurt
  • 1/2 Cup Blood Orange Juice

Instructions

  1. In a food processor, pulse the oats until they are the desired consistency. 

  2. In a bowl, combine the orange juice, plant based milk, vanilla and cocoa powder together. Mix thoroughly and then add the oats. Refrigerate overnight.

  3. Mix together the yogurt and blood orange juice and freeze for 45 minutes, or until it's firm enough to serve. 

  4. Put on top of the oats and enjoy immediately.
