Key Lime & Coconut Overnight Oats

 

Winter is back full force here and I needed something summery to brighten the day; citrus always brightens the day! There are certain food pairings that always go well together. Lime and coconut is such a pair. Instead of ordinary limes though, I decided that I would use key limes.

Key limes are small little bites of sunshine that are packed full of flavor. They are sweeter than ordinary limes and are quite juicy!

To get the green color of the oats I used a very small amount of matcha powder. Use sparingly so that it doesn’t overpower the lime taste. Depending on the tartness of the limes, you will have to adjust the maple syrup. For the coconut oats, I used barely any at all. If your coconut is on the sweeter side, you might need any sweetner at all. I recommend pairing it evenly so that you can get both flavors in every bite!

Ingredients

Key Lime Oats

  • 1/3 Cup Plant Based Milk
  • 8 Key Limes needs to make 1/4 cup of juice
  • 1-2 Tblsp Maple Syrup
  • 1 tsp Pure Vanilla
  • 1 Cup Rolled Oats

Coconut Oats

  • 2/3 Cup Plant Based Milk
  • 1/2 Tblsp Maple Syrup
  • 1 tsp Pure Coconut Extract
  • 1 Cup Rolled Oats
  • 2 Tblsp Desicated Coconut

Instructions

Key Lime Oats

  1. Juice the limes until you have 1/4 cup of juice.

  2. Combine the rest of the ingredients and make sure it is completely combined.

Coconut Oats

  1. Combine the ingredients and stir well. Let it sit for 5 minutes to absorb some of the liquid.

  2. Layer with the lime oats and refrigerate overnight.
