Bellini Chia Pudding

 

Have you ever had a Bellini? It is an alcohol based drink that has peaches and Grenadine in it. It is really quite good, so I decided to take the flavors and make it into a dessert. Instead of Grenadine, I used pureed strawberries. Strawberries have such a beautiful red color don’t you think? Enjoy this alcohol free & edible version!

It is extremely easy to make, which is why I love chia pudding so much. It has a high concentration of flavors in each bite, as well as chia seeds are easy to digest (for most people). Simply start by blending each fruit until it is a puree. Add the rest of the ingredients, and whisk well. Let it sit for 30 minutes, and you can then layer the flavors together.

Ingredients

Peach

  • 1 Cup Peaches
  • 2 Tblsp Peach White Balsamic Vinegar (use 1 Tblsp Maple Syrup if you don't have this)
  • 1/4 Cup Water
  • 1/2 Cup White Chia Seeds

Strawberry

  • 1 Cup Strawberries
  • 2 Tblsp Strawberry Balsamic Vinegar (use 1 Tblsp Maple Syrup if you don't have this)
  • 1/4 Cup Water
  • 1/2 Cup Chia Seeds

Instructions

Peach

  1. Puree the peaches until it is a smooth consistency. 

  2. Whisk together everything and let sit for 30 mnutes.

Strawberry

  1. Puree the strawberries until they are a smooth consistency.

  2. Whisk together everything and let sit for 30 mnutes.

  3. Layer each flavor until the container is full.
