Cilantro is one of those things that you either love or you hate. Obviously I am on the loving it side as I use it in so many of my recipes. Cilantro and lime is a great pairing, and one of my many favorites.
This is a very simple dish to make, and smells wonderful right away. Make sure that you add the salt to it before you cook it, not after.
Add the cilantro and cashews after it is done cooking. Finish it off by sprinkling the rest of the lime juice on it and enjoy right away.
Cilantro Lime Quinoa with Cashews
A delicious dinner side
- 1/2 Cup Quinoa
- 1 Cup Water
- 2 Cloves Garlic
- 2 Limes (juiced)
- 3/4 tsp Chili Powder
- 1/8 tsp Salt
- 1 Cup Cilantro
- 1/2 Cup Cashew Pieces
Juice the limes, and reserve 1 Tablespoon for later.
Chop the cashews and cilantro.
Combine the quinoa, garlic, lime juice, chili powder, salt and water together in a saucepan. Bring to a boil and then reduce to a simmer. Simmer for 10 minutes, or until the liquid is gone.
Toss in the cashews and cilantro. Sprinkle with remaining lime juice and serve immediately.
