Key Lime Pie is one of my favorite pies as it has such a wonderful play on sweet and tart flavors. Making this combination into fat bombs just made perfect sense to me! Whether you are just trying to reduce your sugar intake, or following a specific eating plan, these fat bombs will satisfy your sweet tooth. They are keto-friendly, as well as vegan, and are mouthwateringly delicious. I have included nutritional information at the end to make it simple for you.
These tasty morsels are really simple to make, and are full of flavor. I chose to make it with cashews because they have such a creamy texture, and a more neutral taste than other nuts.
Put all the ingredients into the food processor, and blend until it is completely smooth. It should have the consistency of almond butter or smoother.
Once it’s smooth, you can pour it into chocolate molds, or into silicone cupcake molds. As you can see from the picture, I had was quite messy in my pouring techinque, lol! You can buy so many cute molds to make them into any shape. Put them into the freezer for at least one hour, and then transfer them into a sealed container and keep them in the freezer for up to two months. Key Lime Fat Bombs (Vegan & Keto)
A satisfying and low carb snack
- 1 Cup Raw Cashews
- 1/2 Cup Coconut Oil (melted)
- 1/4 Cup Key Lime Juice (4 Key Limes)
- 1/4 Cup Unsweetened Plant Based Milk
- 1 Tblsp Coconut Flour
- 1 tsp Key Lime Zest
- 1/2 tsp Vanilla
- 1/8 tsp Stevia
Combine everything together in a food processor, and blend until it has a very smooth consistency.
Pour into a silicone mold, or any silicone cupcake molds. Freeze for 1 hour. Keep in a closed container in the freezer for up to one month.
