It has taken me a long time to figure out a good vegan burger recipe that has great texture to it. I finally gound it by combining tempeh and black beans; welcome to my world tempeh! Tempeh is a traditional soy product originating from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. It made such a difference in my burgers! It is more difficult to find, but it is worth the search!
Sauté the onions, garlic and carrots together. I found by putting a lid on the frying pan, that it softened the carrots much faster.
Once it’s done, mix everything in the food processor in the stages listed in the recipe below. Make sure that you don’t over mix it so that it doesn’t become a paste. Some chunks in it are good.
After it is all pulsed together, remove it to a bowl and slowly add the pulsed rolled oats to bind it. I was shocked how much it actually looked like ground beef!
Form into six large patties, or eight medium patties, and place them on a parchment paper lined baking sheet and bake for 20 minutes. Top them with your favorite sauce; doing this does prevent some drying out that can happen when you bake them. You can fry them, but I am trying to reduce the amount of added fats to my meal.
This one is done with grilled pineapple and a homemade mango habanero vegan mayo on it. The sweet and spicy pair well together.
The second one is a vegan bacon and mushroom burger. I topped it with a chipotle mayo. The recipe for the Carrot Bacon is HERE.
The third version is my Towering Thai Burger! The toasted bun is topped with the kimchi, cilantro, peanut sauce and peanuts! It’s a wonderful combination!
The forth version is a delightful twist and is amazing! Yes, that is watermelon on the burger! I made a mint mayo that paired wonderfully with it!
The last one I made with this lovely patty recipe is BLT Sliders! I once again used the Carrot Bacon (you can get the recipe HERE) and topped that with tomatoes and lettuce! I made a sriracha and cilantro mayo to go with it and it is amazing!
Full of flavor
- 1 Tblsp Extra Virgin Olive Oil
- 2 Carrots (cubed)
- 4 Cloves of Garlic
- 1 White Onion
- 1-15 oz Can of Black Beans
- 1 Cup Rolled Oats
- 1.5 Tblsp Tomato Paste
- 1 Tblsp Cajun Spice Mix
- 1 tsp Garlic Powder
- Liquid Smoke
- Salt & Pepper
- 1 Cup Regular Tempeh (chopped)
Preheat the oven to 350F/176C.
Sauté the onions, garlic and carrots in the oil until soft.
In a food processor, pulse the rolled oats until they become fine. Put in a bowl for later.
Add the onion mixture, beans, cajun spice, garlic powder, tomato paste, liquid smoke and the salt & pepper to the food processor. Pulse until it is all mixed together. Add the tempeh and pulse again until mixed.
Put mixture in a bowl and slowly add the ground oats until it is the desired consistency. Add more liquid smoke if needed.
Form into 6 patties and add your favorite barbeque sauce. Bake for 20 minutes, or until cooked, flipping half way though.
