I am always on the hunt for quick and easy appetizer, but let’s be honest, who isn’t? These little morsel are jammed packed with flavor! Blue cheese always pairs well with other bold flavors, so I decided to try it with grilled brussels sprouts and I was delighted!
To make the marinade, you whisk together oil, vinegar, lemon juice and garlic. Add the brussels sprouts, and let it marinate for one hour.
After they are done marinating, all you have to do is quickly grill them for five minutes on an indoor grill. It doesn’t take long at all for them to get the wonderful grill marks on them.
When they are done, assemble them by cutting chunks of vegan blue cheese and red bell peppers. I used Nuts For Cheese Super Blue; it is tart and full of flavor. You can check out their website to purchase yours HERE. Once it is assembled, I recommend serving immediately while they are still warm.
Grilled Brussels Sprouts
Grilled & delicious
- 2 Cups Baby Brussels Sprouts
- 3 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Lemon Juice
- 1 Clove of Garlic
- Nuts For Cheese Super Blue
- Red Bell Pepper
Marinate the brussels sprouts for 1 hour in a container with the oil, vinegar, garlic and lemon juice.
Heat up an indoor grill and grill the brussels sprouts for 5 minutes, or until grill marks appear.
Slice the cheese into chunks and place one piece on each brussels sprout. Top with a piece of red pepper and skewer. Serve immediately.
