Brownie Nice Cream Sandwiches (Vegan)

 

Summer has finally arrived here again this week, and I am looking for ways to cool down. I love summer and the warm, especially when I can eat treats like this! I mean who doesn’t love ice cream sandwiches at any time of the year?

These are so simple to make and have NO added sugar to them. I used Purica Chaga Chocolate Protein Powder plus cacao powder to give it the extra fudginess I love. Yes, I know that’s not a word, but it’s very descriptive. Simply add all the ingredients to the blender and blend.

Spread it on a parchment lined baking sheet until it is around 1/2 inch thick. If it’s thicker than that then it won’t work for the cookies. If you’re just making the brownies though, pour it into a 8×8 inch dish. Bake for 20-25 minutes and then cool.

While the base it baking, it’s time to make the maca nice cream for the middle. The maca adds a wonderful caramel taste to it. Blend everything together in a food processor and blend until it’s smooth. Spoon into molds and freeze for 30 minutes, or until set. Cut brownie into desired shape and place the nice cream on it. Top with another brownie and serve right away or freeze to enjoy later.

Ingredients

Brownie Base

  • 3 Ripe Bananas
  • 2 Scoops Purica Chaga Chocolate Protein Powder (Vegan)
  • 1/3 Cup Cacao Powder
  • 2 Tbsp Plant Based Milk
  • 1 tsp Vanilla
  • 1/2 Cup Smooth Almond Butter
  • 2 Tbsp Smooth Peanut Butter

Nice Cream

  • 3 Frozen Bananas
  • 2 Tbsp Unsweetened Coconut Yogurt
  • 1 tsp Maca Powder
  • 1 tsp Vanilla

Instructions

Brownie Base

  1. Preheat the oven to 350F/176C.

  2. Melt the nut butters over medium low heat whisking constantly. 

  3. Add everything to the blender. Add more milk if needed. Spread it onto a parchment lined baking sheet until it's only 1/2 inch thick. Bake for 20-25 minutes, or until a toothpick comes out with only a bit of the brownie on it. Let it cool completely.

  4. Cut brownie into desired shape and size. 

Nice Cream

  1. Combine everything into a food processor and blend until creamy. Pour into desired shaped molds and freeze for 30 minutes or until set.

  2. Place the nice cream onto 1 brownie base. Top with another brownie and serve immediately. If freezing again, cover and freeze until needed.
