Fresh veggies are great any time of the year, but I find them even more satisfying in the winter. They are like drops of sunshine in the midst of clouds, snow and cold.
You can use whatever veggies you want, but I prefer bell peppers and pea shoots. If you can’t find pea shoots, fresh dill works amazingly too!
Slice the cucumber lengthwise with a mandoline. If you don’t have one, you can use a vegetable peeler. Make sure the strips are thin enough to roll without breaking.
Spread a small amount of homemade, dairy free Tzatziki on each cucumber slice. Place one of each color of bell pepper and pea shoots on top. Roll and secure with a toothpick.
A healthy & simple appetizer
- 1/2 Cucumber
- 1/4 Cup Tzatziki
- 1/2 of each Red, Orange & Yellow Bell Peppers (julienned)
- Pea Shoots (or dill)
Using a mandoline, thinly slice half a cucumber lengthwise.
Spread a small amount of Tzatziki on each cucumber slice. Place each color of bell peppers and pea shoots on top; roll and secure with a toothpick.
