Carrot Ginger Sauce

I tried Carrot Ginger Sauce for the first time last week. I don’t know where this has been all my life! It is soooooo good! I will be making this a lot.

This sauce is so simple and quick to make. This dressing usually has honey in it, but I used Buddha Brands Coconut Nectar for the sweetness. To make the sauce, you simply chop the carrots into chunks, and then blend all the ingredients together until it’s smooth. You can use this as a salad dressing, or as a sauce. As you can see below, I used mine in a Buddha Bowl with roasted vegetables.
