Pasta is one of those comfort foods that many people enjoy, but to be honest, I never really enjoyed it until I couldn’t have it, lol! Good thing for gluten free pasta, am I right?! I decided to top the pasta with this amazing sauce.
For this I used pepitas instead of cashews for the main base. You could use cashews, but I thought that since the Nuts for Cheese Smoky Artichoke & Herb is made with them, I thought it would add another flavour profile. Make sure that you rinse them well before using, but reserve the soaking liquid.
Add the rinsed pepitas and blend until it’s completely smooth. You will need to add some of the reserved liquid to make it have a smooth consistency. Then add the cheese, basil, garlic, and salt & pepper to your blender. You can add the stems of the basil too; they have tons of flavour. Adding a bit of water or vegetable stock will make it thinner if desired. Prepare your gluten free pasta until it’s al dente, and then top it with the delicious basil sauce. It’s so creamy and satisfying, that you can also have it as a dip!
Cheesy Basil Pasta Sauce
A gluten & dairy free meal that will make your mouth water!
- 1 Cup Pepitas (soak overnight)
- 120 g Nuts for Cheese Smoky Artichoke & Herb
- 1 Cup Fresh Basil
- 1 Clove of Garlic
- Salt & Pepper
- Gluten Free Pasta
Drain and rinse the pepitas, but reserve the soaking liquid. Blend it slowly adding the soaking water until it’s smooth. Add the Nuts for Cheese Smoky Artichoke & Herb, basil, garlic, and salt & pepper; blend again
Prepare pasta until it’s al dente. Top with Sauce and enjoy immediately.
Refrigerate left overs for up to four days.
