It’s almost popsicle season, yay! So I thought I would get a head start on the warm weather, and post this recipe for you all now! I love the flavour of chai tea, and I love mango lassi! So here is a delicious, chocolatey en-robed combo for you!
This is very simple to make; it’s just the freezing time that slows it down, lol. Start by mixing all the ingredients for the base together. Pour into 4 popsicle molds, and freeze for 3 hours; or until set. Note: you will have extra base, but you can decide whether to make more popsciles, or make the chia pudding bonus recipe that is now added!
Make the mango puree next. The smell & taste is sooooo amazing that I may have eaten some right away… Spoon a small amount on the top of the frozen popsicles. Freeze for another 5 minutes.
The final step is to dip it in chocolate. I guess you could skip this step, but who doesn’t love chocolate and chai together?! The chocolate sets very quickly, so you do have to do this step fast to get a smooth coating. I made my chocolate coating thick, but you can add more coconut oil if you like to have it thinner. But, look at that coating thickness!
BONUS RECIPE: I decided that instead of making lots of popsicles, that I would use the rest of the base to make a chia pudding. I am so glad I did because the creamy chai pairs perfectly with the chia!
Chia Mango Popsicles
An amazing summer treat
- 440 g Yoso Unsweetened Coconut Yogurt
- 1 Cup Chai Tea (strongly steeped)
- 1-2 Tbsp Buddha Brands Coconut Nectar
- 1 Cup Frozen Mangos
- 1/2+ Cup Coconut Water
- 1/2 Cup Coconut Oil (melted)
- 1/2 Cup Cocoa Powder
- 1 Tbsp Buddha Brands Coconut Nectar
Bonus Recipe Chia Pudding
- 1 Cup Chai Base
- 1/3 Cup Chia Seeds
Mix all the ingredients for the chai base together. Pour into 4 popsicle molds, and freeze for 3 hours or until set. *You will have extra liquid, you can either make more than 4 popsicles, or make the bonus chia pudding recipe*
Mix together the mango puree and spoon a bit over each frozen popsicle. Freeze until set; approximately 5 minutes.
Combine the chocolate coating ingredients. Whisk until completely smooth. Dip each popsicle in the chocolate and freeze again immediately. It will set in around 5 minutes.
BONUS RECIPE: If desired, you can use the rest of the base for making a chia pudding. Combine the chia pudding ingredients, and then refrigerate for at least 1 hour.
