I have been making lots of hummus lately, and it is awesome. It’s a great way to get your protein intake for the meal/day, plus it tastes great! This particular one has the wonderful flavors of butter chicken, but without the meat!

Once again, this is an amazingly simple hummus to make. Yes, it requires a bit of cooking, but it is worth it. After the aromatics are cooked and sauted with the tomatoes, you simply add everything together and blend. I got the recipe for the tandoori spice mix I used here.


Butter Chickpea Hummus
The delicious taste of Butter Chicken in a plant based hummus
Ingredients
- 1 tsp Extra Virgin Olive Oil
- 1 Onion
- 1 tsp Butter or Vegan Butter
- 2 Cloves of Garlic
- 2 Tbsp Grated Ginger
- ¼ Cup Crushed Tomatoes
- 1-2 Tbsp Tandoori Spice Mix (depends on heat preference)
- 540 ml Chickpeas
- ¼ Cup Coconut Milk (solid part in canned coconut milk)
- 1 tsp Ground Cumin
- ½ tsp Ground Turmeric
Instructions

Heat up the oil & butter in a skillet, and saute the onions, garlic, and ginger. When browned, add cushed tomatoes and tandoori spice mix. Simmer for 2-3 more minutes

Add everything to a food processor, and puree until smooth. Enjoy with fresh vegetables or gluten free naan!
