Cardamom Chia Pudding with a Mango Compote


As I’ve not been feeling up to par this week, I wanted something tasty to eat but not heavy or creamy. As I was pondering what to make, I knew I wanted something with a cardamom flavor. I thought about the flavors in a Mango Lassi and knew it would work for a pudding! A Lassi is a popular Indian drink that is usually yogurt based. So I tweaked it and loved the results!

It’s really quite simple to make this. Start by making cardamom tea and letting it steep until it is very strong. Sweeten to how you like your tea (if desired) and then cool. While it’s cooling, start making the mango compote. Once it’s done, blend it just until there are no chunks.

Once it’s done, add crushed tea to it and return to the saucepan for a couple minutes. This makes it have such a good and refreshing taste. Cool and then make the chia pudding. I layer the compote with my chia pudding so that you get both flavors through out the whole dish.

  • 1 3/4 Cups Boiling Water
  • 2 Tblsp Cardamom Tea
  • 1 3/4 Cups Coconut Milk
  • 1 tsp Vanilla
  • 1/4 tsp Cinnamon
  • 2 - 3 Tblsp Maple Syrup
  • 1 Cup Chia Seeds


  • 2 Cups Mango
  • 1 Tblsp Maple Syrup
  • 2 Tblsp Water
  • 1 1/2 tsp Cardamom Tea



  1. To make the pudding, start by boiling the water. Once it boils pour into a container and steep the tea until it is quite strong; approximately 7 - 10 minutes. Sweeten the tea to your taste. Cool.
  2. Once it's cooled, whisk together the rest of the pudding ingredients and refrigerate for 2 hours.


  1. For the compote, put the mango, maple syrup and water into a saucepan. Cook until it is all soft and mushy, which is around 10 minutes. Remove from heat and then blend until there are no chunks. With a mortar and pestle, crush the tea. Return  the puree to heat and add the tea; cook for 1 - 2 minutes. Cool.
  2. Layer the compote and then the chia pudding in your bowl or glass. Repeat until it is full.
