I’ve seen different versions of carrot cake oatmeal but have never tried it. I don’t know why I waited so long to have it because it’s amazing!! It tastes like you’re eating dessert for breakfast, which is always great!
Carrot Cake Oatmeal
- 3 Cups Water
- 1 Cup Steel Cut Oats
- 1 Carrot grated
- 1 1/4 tsp Ground Cinnamon
- 1/2 tsp Ground Nutmeg
- 1 tsp Vanilla
- 2 Tblsp Maple Syrup
- 1/4 Cup Coconut Milk
- Pinch of Salt
- 1/4 Cup Raisins
- 1/2 Cup chopped Apple or Pineapple
Bring water to a boil in a saucepan. Slowly add the oats and cook for 1 minute.
Remove from heat and add everything except the pecans in.
Reduce the heat and simmer for approximately 10 minutes or until the apple/pineapple is tender.
Remove from heat and let it sit covered for 5 minutes. Serve with pecans and desired toppings or as is.
