Chai & Mango Popsicles (Vegan & GF)

It’s almost popsicle season, yay! So I thought I would get a head start on the warm weather, and post this recipe for you all now! I love the flavour of chai tea, and I love mango lassi! So here is a delicious, chocolatey en-robed combo for you!

This is very simple to make; it’s just the freezing time that slows it down, lol. Start by mixing all the ingredients for the base together. Pour into 4 popsicle molds, and freeze for 3 hours; or until set. Note: you will have extra base, but you can decide whether to make more popsciles, or make the chia pudding bonus recipe that is now added!

Make the mango puree next. The smell & taste is sooooo amazing that I may have eaten some right away… Spoon a small amount on the top of the frozen popsicles. Freeze for another 5 minutes.

The final step is to dip it in chocolate. I guess you could skip this step, but who doesn’t love chocolate and chai together?! The chocolate sets very quickly, so you do have to do this step fast to get a smooth coating. I made my chocolate coating thick, but you can add more coconut oil if you like to have it thinner. But, look at that coating thickness!

BONUS RECIPE: I decided that instead of making lots of popsicles, that I would use the rest of the base to make a chia pudding. I am so glad I did because the creamy chai pairs perfectly with the chia!
