I love the abundance of zucchini in the summer as it makes me get creative with how to cook them! So I decided to make zucchini rolls for dinner, and they were amazing!
Fresh ingredients always make the best food! I mean look at how great these look and there are very few ingredients needed for this recipe!
Using a mandoline, horizontally cut the zucchini using the guard to protect your fingers. If you don’t have a mandoline, you can use a vegetable peeler to cut them. It is more difficult, but it works. Grill the zucchini strips until they get grill marks on each side. Use of an indoor grill makes it easier to control the heat. I used Nuts for Cheese Smoky Artichoke & Herb cheese in the spread. Spread the mixture on each grilled zucchini strip and roll it up.
Using your Vitamix or any blender that you have, blend all the sauce ingredients together. I chose to serve my sauce cold because I like the contrast of the hot and cold. The sauce tastes wonderful cooked as will. I recommend trying it both ways to see which way you prefer it.

Cheesy Grilled Zucchini Rolls
Light & full of flavor
Ingredients
- 2 Zucchini
- 60 g Nuts for Cheese Smoky Artichoke & Herb
- 2 Tbsp Unsweetened Coconut Yogurt
Sauce
- 3 Tomatoes
- 1/4 Cup Fresh Basil
- 1 Clove of Garlic
- 1 tsp Dried Oregano
- Salt

With a mandoline, slice the zucchini horizontal.

In a bowl, blend the cheese and the yogurt together.

On an indoor grill, grill the sliced zucchini. Do not overcrowd the grill so that they cook evenly.

Spread a thin amount of cheese mixture onto each zucchini slice and roll them firmly.

Using your Vitamix or any blender, combine all the sauce ingredients together and puree. You can either serve it cold or cook over medium heat until it simmers.

Spread a small amount of sauce on each plate and top with the zucchini rolls
