Cranberry & Blood Orange Chia Pudding


It’s the time of year where blood oranges are in the stores and this makes me so happy! I love citrus in general, but the taste of blood oranges are amazing! They are sweet, but not too sweet and have the right amount of sour, which I think all citrus should have!

I love the look of blood oranges! They have the intense orange,but you can see the maroon red tinge all over them. The contrast of the orange and the red when you cut them open is, in my opinion, beautiful! They have so much flavor and are so sweet that you don’t need any sweetner in the orange pudding. It only takes an hour for it to set in the refrigerator.

It doesn’t take long at all to make the cranberry puree for the the cranberry part of the pudding. It takes 8-10 minutes and smells so good. They are like rubies in a saucepan! Once they are done cooking, puree them and make the cranberry pudding and let it sit for the same amount of time as the orange. I recommend layering the flavors because then you get each flavor in every bite!

Orange Pudding

  • 1/2 Cup Blood Orange Juice approx 2 oranges
  • 1/2 Cup Chia Seeds
  • 1/4 Cup Plant Based Milk

Cranberry Pudding

  • 1 Cup Frozen Cranberries
  • 1/4 Cup Water
  • 1-2 Tblsp Maple Syrup
  • 1 tsp Pure Vanilla
  • 1/4 Cup Plant Based Milk
  • 1/2 Cup Chia Seeds


Orange Pudding

  1. Juice two blood oranges, or how many it takes to make 1/2 of a cup of juice.

  2. Combine the rest of the ingredients and refrigerate for 1 hour.

Cranberry Pudding

  1. Combine the cranberries, water, maple syrup and vanilla in a saucepan. Cook until the skins split and the cranberries are soft; approximately 8-10 minutes. Remove from heat and puree.

  2. Add the rest of the ingredients and refrigerate for 1 hour. Layer the flavors in your favorite container. Top with your favorite nice cream and fruit.

  3. To make the Cranberry Nice Cream that is on top of the parfait: In a food processor blend together 1 banana, 1 Cup of frozen cranberries, 1 tsp vanilla and 2 Tblsp of maple syrup. Adjust maple syrup according to taste and serve immediately.
