Cucumber Rolls

Fresh veggies are great any time of the year, but I find them even more satisfying in the winter. They are like drops of sunshine in the midst of clouds, snow and cold.

You can use whatever veggies you want, but I prefer bell peppers and pea shoots. If you can’t find pea shoots, fresh dill works amazingly too!

Slice the cucumber lengthwise with a mandoline. If you don’t have one, you can use a vegetable peeler. Make sure the strips are thin enough to roll without breaking.

Spread a small amount of homemade Tzatziki on each cucumber slice. Place one of each color of bell pepper and pea shoots on top. Roll and secure with a toothpick.
