Fig Raspberry Coconut Chia Pudding

Today was the first I tried fresh figs and I was not disappointed. They are very hard to find here and I am now absolutely in love with them! I decided to pair it with raspberries in a coconut chia pudding, and I have to say that it pairs perfectly.

Start by blending the raspberries and the center of the figs. At this point you can either strain the seeds out, or leave them in. Add chia seeds and water to thicken.  Make the coconut pudding and layer in the glass. I guarantee that you will love this combination. I hope you enjoy this as much as I do.
