Who doesn’t love macaroni and cheese? I think it is one of those things that is universally loved, and reminicent of our childhoods. There is just something so good about the combination of cheese and pasta that satisfies.
For this I chose to use shell shaped pasta, but you can use whatever shape you love. The Chipotle Cheddar is from Nuts For Cheese, and you can check out their selection of vegan cheeses HERE.
The cheese sauce is so flavorful and cheesy. Make your basic white sauce, and then add the vegan cheddar, liquid smoke (if using) and jalapeño to it. You can’t tell that it’s vegan at all! I mean, look at the color of the sauce, it’s so orange and delicious looking! It is a perfect side to any meal.
Jalapeño Mac & Cheese (Vegan)
Spicy and cheesy
- 2 Tbsp Vegan Butter
- 2 Tbsp All Purpose Flour
- 1/2 tsp Ground Nutmeg
- 1 Cup Unsweetened Plant Based Milk
- 60 grams Nuts For Cheese Chipotle Cheddar
- A few drops of Liquid Smoke
- 1/2 Jalapeño
- 85 grams Dry Pasta
Cook pasta according to directions and then drain.
In a saucepan, melt the butter over medium heat. Whisk in the flour and nutmeg until it starts bubbling. Slowly add the milk.
Once the sauce is thickened, add the cheese, liquid smoke, salt and the jalapeño. Once it is combined, add the pasta and serve.
