Lemon Ginger Overnight Oats, Dairy Free and Gluten Free

 

Oats and chia seeds are a great pairing. Add lemon and ginger, and you have an excellent summery breakfast. Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fibre, iron, and calcium. This is a great and quick breakfast!

Ingredients

  • Cup Water
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Lemon Zest
  • 1 Tbsp Maple Syrup
  • 1 tsp Grated Ginger
  • Cup GF Oats
  • 2-3 Tbsp Chia Seeds

Instructions

  1. Mix everything together, and let it sit overnight.

  2. Top with fresh fruit or granola.
