Lemon and blueberries make excellent breakfast and dessert combos. I decided to revamp my old recipe with new pictures and new layers added. What do you think?

You can’t ask for an easier recipe for breakfast. You simply mix everything together and let it sit overnight. I do add a very small amount of salt to my oatmeal because I think it improves the flavor, but you can skip this step if you like. I added pure lemon oil to mine because I really like it lemony; if you don’t, you can omit it completely.


Lemon Blueberry Overnight Oats
Ingredients
- ⅔ Cup Plant Based Milk
- 1 – 2 Tblsp Maple Syrup
- ½ Lemon (zested & juiced)
- ⅛ tsp Pure Lemon Oil (optional)
- ⅓ Cup GF Rolled Oats
- 2 Tbsp Chia Seeds
- Salt
- ¾ Cup Blueberries
- ½ Cup Lemon Curd
- ½ Cup DF Yogurt
Instructions

In a bowl, combine the milk, maple syrup, lemon zest, lemon juice, and lemon oil if using. Make sure you use the lemon oil sparingly as it is quite strong. Combine the oats, chia seeds, and salt. Stir well and refrigerate overnight.

Scoop a small amount of oats into a jar. Layer with the lemon curd, yogurt, and blueberries. Repeat until the jar is full.

Top with homemade granola or fresh fruit.
Recipe Notes
*If you want to omit the layers, this recipe still tastes amazing!
