Mint + Chocolate = Love! It is one of my most favorite dessert flavor combinations! What is yours? I haven’t made energy balls in awhile, so I decided to use this delectable pairing in them!
I love making energy balls because, number one, they taste good. Number two, they are so incredibly simple to make! You simply combine everything together and pulse it!
Next you roll them into one inch balls and place them on a parchment lined baking tray. Refrigerate until they are firm.
Mint Chocolate Energy Balls (Gluten Free)
A mouth watering treat that's perfect for on the go.
- 1 Cup Pecans
- 1 ¼ Cups Medjool Dates (soaked)
- ¼ Cup Mint Chocolate Dream Almond Butter *See Notes
- ¼ Cup Cacao Powder
- ¼ Cup Maple Syrup
- A few drops of Pure Peppermint Oil
- ½ tsp Water (optional if you need the mixture to stick)
Pulse the pecans in the food processor until they are ground in small chunks.
Add the remaining ingredients, and pulse until the mixture starts to clump together.
Scoop into 1 inch balls, and place on a parchment lined sheet. Refrigerate until they have firmed up, and then transfer them into an air-tight container.
Refrigerate for up to one week.
If you can’t find this specific almond butter, substitute regular almond butter, and add more peppermint oil to the mixture to give it the pleasant minty flavor.
