Mint Grapefruit Salad


Simple salads are a summertime staple for me. It took a bit of time for me to figure out what herbs go with grapefruit. I tried three different ones (dill, basil and mint), but mint was the winner. I find it cuts the acidity that accompanies grapefruit. As I was making the salad, I remembered that I had cherries. I figured I should try it and I was not disappointed in this decision at all!

Section the grapefruit carefully making sure all the pith and membrane are off.

The vinaigrette is so quick to make and it has an amazing color. This is what happens when you use fresh produce!

Mint Grapefruit Salad

The addition of cherries and mint to the salad make this a flavorful and well rounded meal

  • 1/4 Cup Grapefruit Juice approximately 1/2 grapefruit
  • 1/4 tsp Freshly Grated Ginger
  • 1 tsp Extra Virgin Olive Oil
  • Pinch Salt
  • 2 Cups Mixed Greens
  • 1 Tblsp Mint chopped
  • 2 Tblsp Purple Onion thinly sliced
  • 1 Grapefruit sectioned
  • 1/3 Cup Pecans
  • 3 Tblsp Pumpkin Seeds
  • 4 Cherries pitted and halved


  1. For the vinaigrette, whisk the grapefruit juice, oil, ginger and salt into a bowl. Add more oil if desired to cut down on the tartness.
  2. Section the grapefruit making sure all the pith and membrane is off.
  3. Pit and halve the cherries.
  4. Assemble the lettuce, mint, onions, grapefruit sections, cherries, pecans and pumpkin and drizzle with the vinaigrette.
