I have to admit that Thai food is one of my many food weaknesses. It has such a delightful play on flavors. Spicy. Tangy. Savory. I decided to try the flavors of Pad Thai in a hummus; crazy I know, but it works! It’s immediately addicting and it’s healthy. You can eat it in a lettuce wrap with peppers and rice noodles, or you can dip your veggies in it.
It’s very simple to make. All you have to do is add all the ingredients in the food processor and blend. You can add more or less sriracha depending on how spicy you like your food.

Pad Thai Hummus
Ingredients
- 1 - 15 ounce can of Chickpeas
- 1/4 Cup Thai Basil
- 1/4 Cup Cilantro
- 3 Tblsp Natural Peanut Butter
- 3 Cloves of Garlic
- 1/4 Cup Extra Virgin Olive Oil
- 2 - 3 Tblsp Sriracha
- 1 Tblsp Grated Ginger
- 1 Tblsp Rice Vinegar
- 2 Tblsp Lime Juice
Instructions

Rinse and drain the chickpeas.

Add everything to the food processor and blend to the desired consistency. Add more siracha and rice vinegar if needed.
