I’m on a bit of a peach kick lately. It’s true that the only peaches I can get at the moment are frozen, but they still have tons of flavor. Make sure that you make these often, because if you have to share, they will be gone fast.
I used the same base from the Peach Cashew Cake that I made on the previous post and added more to it. This is a very versatile recipe and you can add whatever combination of nuts, seeds or filling that suits you. I have also used coconut chips in it, and it is amazing! You might have to add more coconut flakes depending on how moist the dough is. Roll the dough into one inch balls and refrigerate until they are firm.

Peach Bliss Balls
A wonderful summery snack
Ingredients
- 1 ¼ Cups Medjool Dates
- 2 Cups Pecans
- 1 Tblsp Peach White Balsamic Vinegar (optional BUT highly recommended)
- 2 Tblsp Pepitas (chopped)
- ½ Cup Peach (chopped)
- ¼ Cup Unsweetened Shredded Coconut (add more if needed)
- 3 Tbsp Crushed Coconut Chips (optional)

In a food processor, pulse the pecans until they are in small pieces. Put in a bowl and pulse the dates and the vinegar (if using) until it forms a ball.

Stir in the pepitas, coconut chips, peaches, and coconut. Roll into 1 inch balls. Coat in coconut if desired. Refrigerate for at least 1 hour.
Recipe Notes
Note: If you don't have White Balsamic Vinegar, you can make it without. It just adds a depth of flavour.
