Peach Overnight Oats


I think overnight oats may have reinvented my breakfast life. I found that peaches pair well with oats, especially with cinnamon added. These oats have such a creamy taste and the peaches compliment it perfectly. My secret ingredient is peach white balsamic vinegar. It’s so full of flavor that it enhances the whole dish.

Puree the peaches and balsamic vinegar together for the sauce. If you don’t have peach balsamic vinegar, don’t worry. You can add vanilla; it won’t taste exactly the same, but it’s still really good! Stir all the oats ingredients together and layer with the peaches.

Peach Overnight Oats

  • 1 Cup Rolled Oats
  • 3/4 Cup Any Plant-Based Milk
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla


  • 2 Cups Peaches
  • 1 Tblsp Peach White Balsamic Vinegar
  • 1 tsp Vanilla


  1. Combine all the ingredients for the oats together. Stir thoroughly and let it sit while making the puree.
  2. In a blender, puree the peaches, vinegar and vanilla. If you don't have the vinegar, just add a little more vanilla. If need, add a small amount of water.
  3. Layer the puree with the oats in the jar. Repeat until it's full. Refrigerate for 6 hours or overnight.
