Pecan Apple Pie Overnight Oats


Yes, I’m in love with overnight oats! I wanted to come up with one that has barely any added sweetener though. Since apples are naturally sweet, it makes a perfect addition to it and the pecans give it a good crunch.

In a saucepan combine water, apple, cinnamon and nutmeg. Cook until they are fork tender, or until it’s the texture that you like. I didn’t peel the apples because I enjoy the crunch. Layer with oatmeal, pecans and the apples and refrigerate overnight.

  • 1 Apple
  • 1/2 tsp Cinnamon
  • 2 Tblsp Water
  • 1 tsp Vanilla


  • 1 1/2 Cups Rolled Oats
  • 1/4 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • 1 - 1 1/4 Cups Coconut Milk
  • 1 tsp Vanilla
  • 1/2 Tblsp Maple Syrup
  • 1/2 Cup Pecans


  1. In a saucepan, add the diced apple, cinnamon, vanilla and water. Cover it, stirring occasionally. Cook until it's fork tender.
  2. For the oatmeal, stir the dry ingredients in one bowl and the wet in another. Pour the wet into the dry; stirring until it's combined.
  3. Start layering in the jar with some of the oats, then a layer of pecans, then the apples. Repeat until the jar is full. Refrigerate overnight.
