Overnight oats are officially my favorite breakfast food! They are so easy to make and even easier to create new versions of it. My newest recipe is Pina Colada, which as you know, is my favorite combination of flavors. Honestly, how can you go wrong with pineapple and coconut? In my opinion you can’t!
This is very easy to make; for the oats, simple mix everything together and let it sit overnight in the refrigerator. For the pineapple compote, you combine the pineapple and the water in a saucepan and then blend.
Pina Colada Overnight Oats
Flavours from a delicious tropical drink made into a quick breakfast
- 1⅓ Cups Plant Based Milk (I prefer coconut milk for this recipe)
- 1 tsp Pure Coconut Extract
- ⅔ Cup GF Rolled Oats
- ½ Cup Coconut Flakes
- 5 Tbsp Chia Seeds
- 1 Cup Pineapple
- 3 Tbsp Water
- 1 Tbsp Cornstach (optional; see instructions)
- 1 Tbsp Cold Water (optional; see instructions)
Combine all the oat ingredients together. Stir and let sit overnight.
Combine the pineapple and the first amount of water in a saucepan. Simmer for 15 minutes over medium heat. Puree until it's the desired consistency. If it is not thick enough, you can make the cornstach slurry by mixing the cornstarch and second amount of water; slowly add it to the pineapple. I make this at the same time as the oats & let it sit overnight.
Layer oats and then the compote, or you can serve it in a bowl and spoon the compote over the oats.
*you can half this recipe and it works out fine
