Pina Colada Overnight Oats


Overnight oats are officially my favorite breakfast food! They are so easy to make and even easier to create new versions of it. My newest one is Pina Colada, which as you know, is my favorite combination of fruits. Honestly, how can you go wrong with pineapple and coconut? In my opinion you can’t! I hope that you enjoy this as much as I do.

In two separate bowls, mix the dry ingredients in one bowl and the wet ingredients in the other. I did add maple syrup in the oats, but after eating it, I don’t think it needed it as the pineapple was sweet enough. I won’t be adding it the next time I make it. For the pineapple compote, you can either just blend it raw, or do as I did, combine it in a saucepan with coconut white balsamic vinegar and then blend.

Pina Colada Overnight Oats

  • 1 1/2 Cups Rolled Oats
  • 1/2 Cup Coconut Flakes
  • 1 - 1 1/2 Cups Coconut Milk
  • 1 tsp Pure Coconut Extract
  • 1/2 Tblsp Maple Syrup Optional


  • 1 Cup Pineapple
  • 1 Tblsp Coconut White Balsamic Vinegar
  • 1 Tblsp Water


  1. To make the compote, combine the pineapple, water and the vinegar in a saucepan. Simmer for 15 minutes over medium heat. Puree until it's the desired consistency. Leave until needed. **Raw Option: Blend the pineapple & 1/2 Tblsp vinegar instead of cooking it**
  2. In one bowl combine the dry ingredients and the wet ingredients in another bowl. You can add maple syrup depending on how sweet the pineapple you're using is. Pour the liquid into the dry and stir until completely combined.
  3. Layer oats and then the compote. Repeat until the jar is full. Refrigerate 6 hours or overnight.
