Pumpkin Spice Granola (Vegan)


Granola is one of those versatile things that you can eat on it’s own, top oatmeal or have it with yogurt. The possibilities are endless as is the flavors you can add to it! I chose to make pumpkin spice granola because I love it and it’s so yummy in the cool fall days.

This granola doesn’t have a lot of ingredients, but the ones that I chose are high quality. I tried Silkeny Coconut Oil and I love the smoothness of it. You can add whatever kinds of nuts and seeds that you like, but I love how the pumpkin seeds and pecans taste with this.

Mix all the liquid ingredients together in one bowl so that everything is well combined. Feel free to add more Pumpkin Spice Mix in it if you like a stronger taste.  Spread it on two parchment lined baking sheets and bake for 20 – 25 minutes. After it is cooled, you can put it in an air tight container for up to three months, but mine is always gone way before then!

  • 1/3 Cup Coconut Oil (melted)
  • 1/3 Cup Coconut Nectar (can substitute maple syrup)
  • 2 Tbsp Organic Almond Butter
  • 2 Tbsp Pumpkin Puree
  • 1-2 Tbsp Pumpkin Spice Mix
  • 1 tsp Vanilla
  • 2 Cups Rolled Oats
  • 1/2 Cup Pumpkin Seeds
  • 1/3 Cup Shredded Coconut
  • 1/3 Cup Chopped Pecans


  1. Preheat the oven to 325F/162C.

  2. Mix together the oil, coconut nectar, almond butter, pumpkin and the Pumpkin Spice Mix.

  3. In another bowl mix the rest of the ingredients together. Pour the liquid over the granola and spread it onto 2 parchment lined baking sheets.

  4. Bake for 20-25 minutes stirring twice.
