Pumpkin Spice Overnight Oats

Yes, I love pumpkin spice and I am not ashamed to admit it. If I can incorporate it into breakfast food, all the better! These oats satisfy any craving and I topped it with banana nice cream. I love topping breakfast foods with it as it has no added sugar and it looks like you’re eating dessert.

Start by adding pumpkin and spices to the coconut milk, or any plant-based milk of your choosing. Here is the pumpkin pie spice recipe: 3 Tablespoons of Cinnamon, 2 1/4 teaspoons of Ground Ginger, 1 1/2 tsp of Allspice, 1 1/2 teaspoons of Ground Cloves. If you don’t want to make it, you can buy it premixed. Add the other ingredients and refrigerate overnight. The recipe for the banana nice cream is below.
