This dish has so much flavor and is very satisfying. It is simple and doesn’t take long to make.
These are the satay sauce ingredients. I found chili threads in a cute shop while on vacation. I find they add a delicate chili taste to dishes.
Now the vegetables for the bowl. I love that you can buy fresh carrots julienne as that is the only vegetable that I dislike cutting.
I used my spiralizer for the peppers and am happy with how they turned out. It saved me a lot of time. Do the zucchini next. I prefer my veggies raw so I didn’t cook them, but you could easily do that if you want.

Satay Zucchini Bowl
Ingredients
Sauce
- 1/4 Cup Peanut Butter
- 2 Tblsp Tamari
- 1 Lime juiced
- 1 Clove Garlic
- 3 Chili Threads
Bowl
- 1 Zucchini spiralized
- 1 Carrot grated or sliced
- 1 of each Red, Orange & Yellow Bell Pepper
- 2 Tblsp Cilantro
- 1 Tblsp Peanuts
Instructions
Sauce

Whisk the peanut butter, tamari, lime juice, garlic and chili threads.

Pour into a saucepan and heat it up.
Bowl

Drizzle desired amount over the zucchini, carrots and peppers. I made this with raw vegetables, but you can cook them if wanted.

Top with cilantro or peanuts.
