I decided I wanted to try something new and that I’ve never made. So after looking online, I decided to try Tostones. They are made from mashed plantains and are usually deep-fried. I wanted something a bit lighter, so I used only a bit of coconut oil to fry them in. I loved how these taste and will be making them a lot!
After cutting up the plantain into pieces, pan-fry them in a little oil and garlic until brown on each side. I put a lid on them so the heat stayed in and I could use less oil. I used coconut oil because I like the taste of it with the plantains. Feel free to use whatever oil you prefer.
Once they are browned, smash them with a wooden spoon or can. Pan-fry them again until completely brown. Top with guacamole and Sofrito; the link for the Sofrito recipe is HERE .
- 2 Green Plantains
- 2 Tblsp Coconut Oil or any oil that you prefer
- 2 Cloves of Garlic
- Salt & Pepper
Heat oil in the pan and then add garlic.
Cut the plantain into 1 inch pieces and place them in a pan. Sprinkle with salt & pepper. Place a lid on it to keep the heat in. Cook around 3 - 5 minutes per side.
After it's brown on each side, remove from the pan and smash each plantain. Fry for another 2 - 3 minutes.
Place on a paper towel to remove any excess oil. Top with Sofrito and guacamole. The recipe for the sofrito is posted in the blog above the recipe.
